kso basically i said:

• familiarity with the shape - would you rather eat a fake slice of bologne or a pile of whatever they’re made of? 
• convenient - easier to make a veg burger & chickpea nuggets
• and it all comes back to tradition - a veg that comes from a family of carnies is still going to want to celebrate & have some tofurkey on thanksgiving
